Tradition and Modern Age

In our winery, the traditional is combined with modern technology. While the red wines mature almost exclusively in oak barrels in order to increase the bouquet, the white wines and rosés are stored in modern stainless steel tanks so that the freshness and the effervescence of these wines are not lost.

In order to produce our red wines, we use the traditional mash fermentation process whereby the must is fermented together with the peel. By so doing, in addition to their colour, our red wines also receive their aroma as well as a well-balanced tannin structure.

We often ferment our white wines and rosés chilled over many weeks. Thus, we preserve their refined fruity aromas.
